  • 1 cup of heavy whipping cream (divided)
  • 1 package (3.4 ounces) instant vanilla pudding mix

  • 1 cup canned pumpkin
  • gingersnaps
  • 3 Tablespoons sugar
  • pinch salt
  • 1/4 tsp vanilla
Directions:
  • In a bowl, combine milk, 1/2 cup cream, pudding mix and pie spice; whisk until thickened and smooth, about 2 minutes. Stir in pumpkin. Spoon into dessert dishes.
  • Whip the remaining cream with the sugar, salt and vanilla until stiff peaks form. Place a dallop of cream on each pudding cup and garnish with a gingersnap cookie.
Yields 6-8 servings.
