Homemade Holidays- Mason Jar Pancake Mix

This week for our last Homemade Holiday drop in activity, we mixed up a pancake mix adapting the recipe from Tidy Mom. We finally received our much awaited acrylic domes to create snow scenes as a decoration on the top of the jars.
We reduced Cheryl's recipe by a third so each completed mix would fit into a pint jar.

In a bowl with a spout we mixed:
1 cups white-whole wheat flour
1-1/2 teaspoons of cinnamon
1 Tablespoon of white sugar
2 teaspoons of baking powder
a scant 1/2 teaspoon of salt
2 Tablespoons dry powdered milk
1/2 teaspoons powdered egg replacer (we found ours next to the powdered milk in our store)
We also made a note for the recipient to add a cup of water and 3 T of oil or melted fat to the batter.
Pour into your jar and decorate.

We used white mouth pint jars and purchased 80 mm acrylic fillable ornaments. We attached the ornament half to the rim of the pint jar lid by using 4 dabs of hot glue on the rim at the 12, 3, 6 and 9 positions. We glued batting and our figurines in top of the lid. We used mini ornaments, which was a more cost effective way to by miniature figures.

We also upcycled Christmas cards by tracing the lid on the card and cutting a jar topper.
Some participants opted for the larger quart size jar so they could offer their gift recipients an all-in-one project- shake in the jar pancake mix.

The end result...a festive and healthy gift most anyone can use.
